Organic Locust Bean Gum – its much better than it sounds!

Organic Locust bean gum, otherwise known as (carob bean gum) or, (carob gum) does not actually have anything to do with locusts. It is extracted from the seeds of the carob tree and is used as a natural, plant based and vegan thickener.

It is produced by milling the endosperm of the seeds which are found in carob tree pods.

Due to the chocolaty fragrance and taste Locust bean gum is commonly used as a thickener in ice cream, yoghurt and cheese. It can can also be used in soups, sauces and desserts.

Vegan Cream Cheese


Tofu block
2 tbl spoons of lemon juice
100ml Soy milk
1 pinch of salt
2 tablespoon of olive oil
1/2 tbl spoon of organic locust bean gum


1. Blend the tofu in a mixer.

2. Add all the ingredients to a saucepan over medium heat and stir ensuring no lumps form. Once it starts to thicken remove from heat.

3. If you want it finer then give it a whizz in the blender again.

4. Let is rest in the refrigerator for 2 hours.




For optimum freshness keep in a cool place away from moisture and direct sunlight.  Store in a tightly sealed bag or container.
