Sweet Potato Tacos

  • Peel the sweet potatoes and cut into 0.5cm cubes.
  • Place in a baking tray and add the olive oil, paprika and season generously with salt and pepper.
  • Remove the top of the garlic bulb, drizzle with olive oil and place in a separate baking tray.
  • Roast both in the oven at 200c. 20 minutes removing the garlic after 15.
  • Let the garlic cool slightly and then gently squeeze the cloves so that the garlic pops out of it’s skin.
  • Place the black beans in with the sweet potato and roast for a further 5 minutes.
  • Remove from the oven then add the roasted garlic and chopped parsley to the tray and mix well.
  • To make the dressing, place all ingredients in a food processor and blitz until smooth.
  • To serve, place a large spoonful of the sweet potato on a warmed tortilla and drizzle with the avocado dressing.
