Peel the sweet potatoes and cut into 0.5cm cubes.
Place in a baking tray and add the olive oil, paprika and season generously with salt and pepper.
Remove the top of the garlic bulb, drizzle with olive oil and place in a separate baking tray.
Roast both in the oven at 200c. 20 minutes removing the garlic after 15.
Let the garlic cool slightly and then gently squeeze the cloves so that the garlic pops out of it’s skin.
Place the black beans in with the sweet potato and roast for a further 5 minutes.
Remove from the oven then add the roasted garlic and chopped parsley to the tray and mix well.
To make the dressing, place all ingredients in a food processor and blitz until smooth.
To serve, place a large spoonful of the sweet potato on a warmed tortilla and drizzle with the avocado dressing.
