To make this special sugar the harvesters cut a line on the flower of the coconut palm and the liquid sap is collected. The sap is heated to evaporate any moisture and reduce it into sugar crystals. The end result looks a bit like demerara sugar and has a rich, aromatic flavour similar to caramel. This rich, fragrant sugar is deep brown in colour and absolutely delicious.
