Organic Durum Whole Wheat Semolina Flour aka Pasta flour.

Organic Durum Whole Wheat Semolina flour has less elasticity and more plasticity than all purpose flour making it the head honcho of pasta making. This flour is produced on millstones and contains the whole grain. It can be used for those thick and rugged pasta shapes such as fusilli, fettuccine and tagliatelle.

Alternatively, it can be used for any thing from delicious sour dough flat breads to moreish Moroccan couscous.

Organic Pasta Recipe

  1. Add 250g Organic Durum Whole Wheat Semolina Flour to a bowl.
  2. Make a well and add 1/2 cup of lukewarm water and salt to taste.
  3. Combine well with a fork.
  4. Knead for 3 minutes until you have created a compact dough ball.
  5. Cover and rest for 30 minutes
  6. Roll out into a thin rectangle
  7. Then roll the rectangle up into a tube
  8. Cut 1cm slices off the tube
  9. Cooking time for his pasta is approx. 6-8 minutes in boiling water.


For optimum freshness keep in a cool place away from moisture and direct sunlight. Store in a tightly sealed bag or container.
