Our Organic Einkorn Flour is ground down from an ancient grain which is an ancestor of durum wheat. It was among the first cereals cultivated and is said to have been developed over 20,000 years ago in the Middle East. It can be eaten as Whole Einkorn Grain or ground into this lovely nutritious flour.
Einkorn is popular because it has a different structure to modern wheat varieties. Some people find this much easier to digest than modern wheat which has been manipulated over the years. There is evidence of Einkorn cultivation as far back as 6000BC.
If you like experimenting with speciality flours then Einkorn is a great one to try. It has a dense texture and can make a heavier dough or batter, so if you are starting out you could combine it with a wholemeal or white flour to give a lighter bake.
