Organic Emmer Flour is produced from an ancient grain known as Emmer (or Farro). Emmer is an ancestor of duram wheat so it works perfectly in a wide range of recipes including breads, pastas and cakes.
Emmer and its products are a popular alternative to modern wheat varieties because some people find it easier to digest. This may be because it is genetically simple (emmer has 28 chromosomes and modern wheat can have over 200) and it is a lower gluten grain.
Organic Emmer Grain was among the first cereals cultivated and it has a deliciously nutty flavour. Emmer is harvested at its peak to get the fullest flavour which makes it a great bread flour.
