Ground down from organic wheat berries, this English blend has a low protein content, which makes it perfect for cakes and pastries.

Here in the UK, we have a cool maritime climate which gives the wheat a softer texture. The wheat produced here is lower in protein because the soil here has naturally lower levels. Lower protein flours are perfect for cakes due to its light texture.
