Thai Basil Stir Fry Recipe

Ingredients
  

  • 400 g organic tempeh
  • 1 large thumb of ginger
  • 1 red chilli
  • 1 tbsp soy sauce
  • 1 tbsp plant-based fish sauce
  • 1 tbsp ketjap manis
  • 50 g peas
  • 30 g organic peanuts (toasted)
  • A handful of Thai basil
  • 1 tbsp sesame oil

Instructions
 

  • Heat a large wok or frying pan and add the sesame oil.
  • Add the plant based meat, break up in the pan and cook on a high heat for 4-5 minutes or until lightly browned.
  • Peel and grate the ginger. Finely chop the garlic and chilli.
  • Add to the pan and cook for 2 minutes.
  • Add the soy, fish sauce and ketjap manis and continue to cook for another 2 minutes.
  • Add the peas and cook for a final 2 minutes.
  • Finely chop the toasted peanuts and add to the pan along with the Thai basil.
  • Give a final mix and serve over rice.
