For the salsa:
200
g
cherry tomatoes
1
garlic clove
1/2
red onion
1/2
red chilli
1/2
lime
1
tbsp
organic extra virgin olive oil
A large handful of coriander
natural fine sea salt
organic cracked black pepper
Instructions
Cut the cauliflower into approximately 3cm pieces and place in a baking tray.
Sprinkle with the cumin, paprika and chilli flakes then drizzle with the olive oil.
Mix well then roast in a 200c oven for 25-30 minutes until the cauliflower is golden.
For the salsa, finely chop the cherry tomatoes, red onion, red chilli, garlic and place in a bowl.
Juice the lime, roughly chop the coriander then place both in the same bowl along with the olive oil.
Season generously with salt and pepper and mix well.
To serve, heat the roti then place a portion of the cauliflower on top, followed by a large spoonful of the salsa and a drizzle of yoghurt.
