Finely chop the garlic and add to a saucepan with the olive oil and chilli flakes.
Fry on a medium heat for 2 minutes then add the can of tomatoes.
Roughly chop the roasted red peppers and add to the pan reserving a tablespoon for garnish.
Season with salt and pepper.
Bring the sauce to the boil then then simmer for 30 minutes stirring regularly breaking up the tomatoes as you go.
To prepare the gnocchi, take a frying pan and add 1 tbsp of olive oil and fry the gnocchi on a medium to high heat for 4-5 minutes or until golden.
Grate the cheese and roughly chop the parsley.
To serve, put a large portion of the sauce on a plate, top with the fried gnocchi and garnish with some chopped parsley, grated cheese and the reserved roasted red peppers.
