Cumin Spiced Potatoes Recipe

  • Place the potatoes in a saucepan of cold salted water.
  • Bring to the boil and simmer for 5 minutes.
  • Drain then allow to cool.
  • Place the potatoes on a baking tray and drizzle with the olive oil and season with salt and pepper.
  • Roast at 220c for 20 minutes then remove and lightly squash the potatoes with a fork.
  • Lightly crush the cumin seeds in a pestle and mortar.
  • Add the cumin seeds and roast for a further 10-15 minutes or until the potatoes are golden brown.
  • To make the dip, finely chop the garlic and coriander and juice the lemon.
  • Mix with the yoghurt, olive oil and season well.
