Roasted Red Pepper Salsa
This is such a tasty accompaniment to roasted vegetables, tortilla chips or your favourite Mexican dishes.

Ingredients
- 200 g cherry tomatoes
- 200 g roasted red peppers
- 1/2 red onion
- A large handful of parsley
- A large handful of coriander
- 2 avocados
- 1 garlic clove
- 1/2 tsp organic chilli flakes
For the dressing:
- 2 tbsp organic extra virgin olive oil
- 1 tbsp organic apple cider vinegar
- 1/2 lime
- 1/2 tsp sugar
- natural fine sea salt
- organic cracked black pepper
Instructions
- Firstly make the dressing, juice the lime and whisk together with the vinegar, sugar and salt and pepper.
- Now slowly drizzle in the olive oil whilst whisking and set aside.
- Next, roughly chop the tomatoes, red peppers, avocado and herbs and add to a large mixing bowl.
- Finely chop the red onion, garlic and chilli and add to the same bowl.
- Pour over the dressing and mix together well.
