Roasted Red Pepper Salsa

This is such a tasty accompaniment to roasted vegetables, tortilla chips or your favourite Mexican dishes.

Ingredients
  

  • 200 g cherry tomatoes
  • 200 g roasted red peppers
  • 1/2 red onion
  • A large handful of parsley
  • A large handful of coriander
  • 2 avocados
  • 1 garlic clove
  • 1/2 tsp organic chilli flakes

Instructions
 

  • Firstly make the dressing, juice the lime and whisk together with the vinegar, sugar and salt and pepper.
  • Now slowly drizzle in the olive oil whilst whisking and set aside.
  • Next, roughly chop the tomatoes, red peppers, avocado and herbs and add to a large mixing bowl.
  • Finely chop the red onion, garlic and chilli and add to the same bowl.
  • Pour over the dressing and mix together well.
