Rocket Pesto Recipes
A pesto made with walnuts and rocket.

Ingredients
- 25 g organic walnuts
- 25 g organic pinenuts
- 100 g plant-based cheese
- 1 garlic clove
- 60 g rocket
- 30 g organic basil
- 2 tbsp organic extra virgin olive oil
- 400 g organic spaghetti
- naturally fine sea salt
- organic cracked black pepper
Instructions
- Chop the garlic and add to a food processor along with the nuts, olive oil, basil and half the rocket.
- Season with salt and pepper and blitz until smooth.
- Cook the pasta according to the pack instructions, drain reserving some of the cooking water.
- Put the pasta back in the pan and add the pesto along with a tbsp of cooking water.
- Grate the cheese and add to the pan along with the rocket.
- Mix together well and serve.
