For the dressing:

  • To make the dressing, peel and finely grate the ginger and garlic and place in a mixing bowl.
  • Juice the lime and add to the bowl.
  • Add the sugar, soy sauce and oil and season with salt and pepper.
  • Whisk together well and put aside.
  • Take a frying pan or wok, add the sesame seeds
  • Roast on a medium heat until they are golden then remove from the pan. This should take 2-3 minutes.
  • Next, grate the carrot and finely shred the cabbage and place in a large mixing bowl along with the edamame.
  • Finely slice the red pepper, radish, spring onion and cucumber and add to the bowl also.
  • Pour over the dressing, mix well and then top with the toasted sesame seeds.
