Sesame Ginger Slaw Recipe
This eastern take on coleslaw is made with sesame seeds, lime and ginger. If you are looking for a side dish packed with flavour then this addictive slaw recipe is a must. Ingredients
- 500 g carrot
- 500 g cabbage
- 100 g organic edamame beans cooked
- 1 red pepper
- 8 radish
- 4 spring onion
- 1/2 cucumber
- 50 g organic sesame seeds
For the dressing:
- 1 thumb of ginger
- 1 garlic clove
- 1 lime
- 1 tsp organic brown sugar
- 1 tbsp soy sauce
- 1 tbsp organic toasted sesame oil
- 1 tbsp organic extra virgin olive oil
- natural fine sea salt
- organic cracked black pepper
Instructions
- To make the dressing, peel and finely grate the ginger and garlic and place in a mixing bowl.
- Juice the lime and add to the bowl.
- Add the sugar, soy sauce and oil and season with salt and pepper.
- Whisk together well and put aside.
- Take a frying pan or wok, add the sesame seeds
- Roast on a medium heat until they are golden then remove from the pan. This should take 2-3 minutes.
- Next, grate the carrot and finely shred the cabbage and place in a large mixing bowl along with the edamame.
- Finely slice the red pepper, radish, spring onion and cucumber and add to the bowl also.
- Pour over the dressing, mix well and then top with the toasted sesame seeds.
