Sweet Potato Tacos
These sweet potato tacos make a wholesome snack at any time of day.

Ingredients
- 4 sweet potatoes
- 1 garlic bulb
- 2 tsp paprika
- 2 tbsp olive oil
- 250 g cooked black beans
- A handful of chopped parsley
- natural fine sea salt
- organic cracked black pepper
Dressing
- 2 tbsp plain yoghurt (or plant based alternative)
- 1 lime juiced
- 1 avocado
- 1 tbsp organic extra virgin olive oil
- Salt
- pepper
Instructions
- Peel the sweet potatoes and cut into 0.5cm cubes.
- Place in a baking tray and add the olive oil, paprika and season generously with salt and pepper.
- Remove the top of the garlic bulb, drizzle with olive oil and place in a separate baking tray.
- Roast both in the oven at 200c. 20 minutes removing the garlic after 15.
- Let the garlic cool slightly and then gently squeeze the cloves so that the garlic pops out of it’s skin.
- Place the black beans in with the sweet potato and roast for a further 5 minutes.
- Remove from the oven then add the roasted garlic and chopped parsley to the tray and mix well.
- To make the dressing, place all ingredients in a food processor and blitz until smooth.
- To serve, place a large spoonful of the sweet potato on a warmed tortilla and drizzle with the avocado dressing.

Tacos are great and using sweet potato is so good for the texture!
