For the salsa:

  • Cut the cauliflower into approximately 3cm pieces and place in a baking tray.
  • Sprinkle with the cumin, paprika and chilli flakes then drizzle with the olive oil.
  • Mix well then roast in a 200c oven for 25-30 minutes until the cauliflower is golden.
  • For the salsa, finely chop the cherry tomatoes, red onion, red chilli, garlic and place in a bowl.
  • Juice the lime, roughly chop the coriander then place both in the same bowl along with the olive oil.
  • Season generously with salt and pepper and mix well.
  • To serve, heat the roti then place a portion of the cauliflower on top, followed by a large spoonful of the salsa and a drizzle of yoghurt.
