Roasted Cauliflower Roti Recipe
A traditional Indian flatbread served with spiced roasted cauliflower and a zingy tomato salsa.

Ingredients
- 8 roti or flatbread
- 1 large cauliflower
- 1 tbsp organic extra virgin olive oil
- 1 tsp organic cumin
- 1 tsp organic chilli flakes
- 1 tsp organic paprika
- 1 tbsp natural yoghurt or plant-based alternative
- natural fine sea salt
- organic cracked black pepper
For the salsa:
- 200 g cherry tomatoes
- 1 garlic clove
- 1/2 red onion
- 1/2 red chilli
- 1/2 lime
- 1 tbsp organic extra virgin olive oil
- A large handful of coriander
- natural fine sea salt
- organic cracked black pepper
Instructions
- Cut the cauliflower into approximately 3cm pieces and place in a baking tray.
- Sprinkle with the cumin, paprika and chilli flakes then drizzle with the olive oil.
- Mix well then roast in a 200c oven for 25-30 minutes until the cauliflower is golden.
- For the salsa, finely chop the cherry tomatoes, red onion, red chilli, garlic and place in a bowl.
- Juice the lime, roughly chop the coriander then place both in the same bowl along with the olive oil.
- Season generously with salt and pepper and mix well.
- To serve, heat the roti then place a portion of the cauliflower on top, followed by a large spoonful of the salsa and a drizzle of yoghurt.
