Roasted Red Pepper Gnocchi Recipe

  • Finely chop the garlic and add to a saucepan with the olive oil and chilli flakes.
  • Fry on a medium heat for 2 minutes then add the can of tomatoes.
  • Roughly chop the roasted red peppers and add to the pan reserving a tablespoon for garnish.
  • Season with salt and pepper.
  • Bring the sauce to the boil then then simmer for 30 minutes stirring regularly breaking up the tomatoes as you go.
  • To prepare the gnocchi, take a frying pan and add 1 tbsp of olive oil and fry the gnocchi on a medium to high heat for 4-5 minutes or until golden.
  • Grate the cheese and roughly chop the parsley.
  • To serve, put a large portion of the sauce on a plate, top with the fried gnocchi and garnish with some chopped parsley, grated cheese and the reserved roasted red peppers.
